This setting is actually suggestion only for the Carlinkit Dongle. Video parameters for the projection are fully negotiated between the Carlinkit Dongle and the phone. You can check additional CarlinKit settings available via web browser (usually http://192.168.50.1) after connection to the dongle wifi network.

My carplay had huge icons etc but now feels more appropriately scaled. maybe this would work for you?
